There are two kinds of people: those who eat to live and those who live to eat. The former scarf down their food, heedless of the quality or origins of the meal; the latter savor every bite, while planning the next meal, too. They know recipes by heart; they go nuts when they try something great and are crestfallen when served something not up to par. They are the folks who will enjoy every page of this issue.
Our 2010 Guide to Latin American Dining approaches the subject from two angles. Our critics offer a view of the future in Bogotá, Buenos Aires, Guayaquil, Lima, Quito and Santiago. Where is our cuisine heading? What new culinary trends will we see? The success of Peruvian cuisine shines through in these articles, but so does our openness to foreign influences and the drive to reclaim traditional fare. These same critics also picked their current favorites in new or renovated restaurants to share with our readers.
Since there is more to great food than fine dining, we went to 19 cities in search of the best tips on local flavor, from restaurants and bars to stores, ice cream parlors, traditional products and more. We’ve also included a guide to spices showcasing the origins and optimum uses for a range of classic seasonings.
Of course, we also traveled plenty. We visited Puerto Varas, a city with a distinct German influence in the south of Chile, and Prague, where we sampled famous beers.
