“So, what’s good?” One of the most important questions for travelers is what to eat in an unfamiliar country. Some people are true gourmet adventurers, ready to try whatever is put in front of them, always eager to discover a unique texture or flavor in an unknown dish, creating a culinary catalogue of their experiences. Others prefer a safer route, eating what they know – or something that resembles what they know – perhaps ignoring that a people’s cuisine is also a form of cultural expression.
In our eighth Dining Guide, we didn’t want to exclude either group. After all, there’s no right or wrong when it comes to food. To prepare you for what to expect at your next destination, we divided our countries into culinary regions, presenting a representative dish from each. Twenty-seven examples of typical fare, delicious to some, strange to others. We spent time in favorite neighborhoods in seven cities, offering daylong tours that include restaurants, cafés, ice cream shops and bars, as well as fashion and design stores, parks and cultural centers. And following the tradition of our annual guide, we enlisted seven respected food critics to select the best new restaurants in Bogotá, Buenos Aires, Guayaquil, Lima, Quito, Santiago and São Paulo.
But that’s not all. We’re offering a visit to the Ecuadorian province of Esmeraldas that will leave you hungry for more, plus tours of old-fashioned general stores in the Province of Buenos Aires. We also feature a gourmet weekend in San Francisco and a guide to the vineyards of the Hunter Valley in Australia. Interviews with famous chefs, great reads, culinary routes and plenty of recommendations round out this elaborate feast, which we hope will add plenty of zest to your trip.
